Ingredients:
– 2 sheets of puff pastry
– 1 cup almond flour
– 1/2 cup granulated sugar
– 1/4 cup unsalted butter, softened
– 2 eggs
– 1/2 teaspoon almond extract
– 1/2 teaspoon vanilla extract
– 1 egg yolk (for egg wash)
– 1 tablespoon water (for egg wash)
– A small trinket or fève (optional, traditionally hidden inside the cake)
Instructions:
1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. In a bowl, mix the almond flour, granulated sugar, and softened butter until creamy.
3. Add the 2 eggs, almond extract, and vanilla extract to the mixture and blend until smooth.
4. Roll out one sheet of puff pastry on the prepared baking sheet. Spread the almond mixture evenly over the pastry, leaving about a 1-inch border around the edges.
5. If using a fève, place it somewhere in the almond mixture.
6. Place the second sheet of puff pastry on top and press the edges to seal. You can use a fork to crimp the edges for a decorative touch.
7. Mix the egg yolk and water together to create an egg wash. Brush the top of the cake with the egg wash.
8. Using a sharp knife, lightly score a decorative pattern on the top of the pastry, being careful not to cut all the way through.
9. Bake in the preheated oven for 25-30 minutes, or until the cake is golden brown and puffed.
10. Let the cake cool slightly before serving. Traditionally, the person who finds the fève in their slice is crowned king or queen for the day!
