This Korean leek pancakes recipe delivers crispy, savory pancakes that are tender on the inside and golden on the outside. Made with simple ingredients and served with a flavorful dipping sauce, this dish works well as an appetizer, side, or light meal.

Ingredients for Korean Leek Pancakes

  • 1 cup Korean leeks (or regular leeks), finely chopped

  • 1 cup all-purpose flour

  • 1 cup water

  • 1 large egg

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • 2 tablespoons vegetable oil (plus more for frying)

  • Optional: chopped green chili or red pepper flakes for added heat

Dipping Sauce for Korean Leek Pancakes

  • 2 tablespoons soy sauce

  • 1 tablespoon rice vinegar

  • 1 teaspoon sesame oil

  • 1 teaspoon minced garlic

  • Chopped scallions (optional)

This Korean leek pancakes recipe is easy to prepare and comes together quickly with minimal prep.

Instructions:

Step 1: Mix the Batter

To begin, combine the flour, water, egg, salt, and black pepper in a mixing bowl. Whisk until the batter is smooth and lump-free. Next, gently fold in the chopped leeks. For extra heat, add green chili or red pepper flakes if desired.

Step 2: Warm the Pan

Meanwhile, place a non-stick skillet over medium heat. Add 2 tablespoons of vegetable oil and allow it to heat until shimmering.

Step 3: Cook the Pancakes

Once the pan is hot, pour a ladleful of batter into the skillet and spread it into a circle about ¼ inch thick. Let it cook for 3–4 minutes, until the bottom turns golden brown and crispy.
Using a spatula, carefully flip the pancake and cook the other side for another 3–4 minutes, until fully cooked. Transfer the pancake to a plate and keep warm. Continue cooking the remaining batter, adding more oil as needed.

Step 4: Prepare the Sauce

While the pancakes cook, combine the soy sauce, rice vinegar, sesame oil, and minced garlic in a small bowl. Stir well, then add chopped scallions if using.

Step 5: Serve and Enjoy

Finally, cut the pancakes into wedges and serve warm with the dipping sauce on the side.

Tip

For extra crispiness, avoid overcrowding the pan and gently press the pancake with a spatula while cooking.

Enjoy!
