INGREDIENTS
- 1 cup of white rice
- 2 cups of water
- 4 cups of milk (preferably whole milk)
- ½ cup of sugar
- 1 teaspoon of vanilla extract (optional)
- ½ teaspoon of ground cinnamon (optional)
- A pinch of salt

INSTRUCTIONS
#1: Cook the Rice: In a medium saucepan, bring 2 cups of water to a boil. Add the rice and a pinch of salt. Reduce the heat to low, cover, and simmer for about 15 minutes or until rice is tender and the water is absorbed.
#2: Prepare the Pudding: In a large saucepan, combine the cooked rice, 4 cups of milk,and ½ cup of sugar. Cook over medium heat, stirring frequently, until the mixture thickens (about 15-20 minutes).
#3 Adding flavor (optional): Once the mixture has thickened, stir in 1 teaspoon of vanilla extract. If desired, add ½ teaspoon of ground cinnamon and a ¼ teaspoon of nutmeg for extra flavor.
#4 Finish Cooking: Continue to cook the pudding over medium heat, stirring constantly until it reaches your desired consistency. The pudding will thicken more as it cools.
#5 Serve: Remove the pudding from the heat and let it cool slightly. Serve warm or chilled, depending on your preference.
