- 1 cup (200g) granulated sugar
- ½ cup (120ml) light corn syrup
- ½ cup (115g) unsalted butter
- ¼ cup (60ml) heavy cream
- ½ cup (110g) packed brown sugar (light or dark)
- ¼ teaspoon salt
- 1 teaspoon vanilla extract

Prepare Your Pan: Line a baking sheet with parchment paper or lightly grease a silicone mold.

Melt the Ingredients: In a heavy-bottomed saucepan over medium heat, combine the granulated sugar, brown sugar, corn syrup, butter, and salt. Stir continuously until the butter melts.

Heat to the Right Temperature: Insert a candy thermometer and cook the mixture, stirring occasionally, until it reaches 300°F (150°C) for hard candy or 250°F (120°C) for softer butterscotch chews.

Add Cream & Vanilla: Once at the desired temperature, carefully stir in the heavy cream and vanilla extract (be careful as it may bubble up).

Pour & Cool: Quickly pour the hot mixture onto the prepared baking sheet or into molds. Let it cool completely at room temperature.

Break or Cut: Once hardened, break into pieces or cut into squares with a sharp knife.
